Duck meat comes from several bird species within the Anatidae family. These birds live in both salt water and fresh water environments.

People consume duck in many different cuisines across the globe. The meat is highly nutritious because it is rich in protein and iron. However, it is also very high in fat and cholesterol.

Some menus use the term "duckling" to describe juvenile birds. This term might refer to the age of the animal or simply serve as a menu name.

Cooking duck often requires specific techniques to manage its high fat content. Roasting is a common method used to help crisp the skin.

In the French method known as duck confit, or "confit de canard," the meat is preserved. Cooks cure the duck legs in salt and then marinate them. The meat is poached in duck fat, often with garlic and various herbs. Another complex French dish is pressed duck, which originated in Rouen. This dish uses a "Rouennaise sauce" made from puréed duck liver.

Different types of ducks serve different culinary purposes. The mallard is a freshwater species that humans have domesticated into livestock. The Pekin duck is another vital livestock breed. It is the most common duck consumed in the United States.

Because many Pekin ducks are raised in Long Island, New York, they are sometimes called "Long Island" ducks. Other specialty breeds include the Muscovy duck and the mulard duck. The mulard is a sterile hybrid created from Pekin and Muscovy parents. Unlike most domesticated ducks, Muscovy ducks do not descend from mallards.

Chinese cuisine features many famous duck preparations. Peking duck originated in Beijing during the Ming Dynasty era. This dish is prized for its thin, crispy skin. Authentic versions focus mostly on the skin rather than the meat.

Diners often eat it with small pancakes, scallions, and hoisin or sweet bean sauce. In Cantonese cuisine, shops produce roasted duck called "siu aap." This can be served as a main meal or as part of a ten-course banquet appetizer. This appetizer might include "char siu" (roasted pork) or "siu yuk" (roasted pig belly).

Regional traditions in Asia and Europe show the bird's deep cultural roots. In Northeast India, duck is vital to Assamese cuisine. Old Assamese texts like the "Kamarupa Yatra" discuss eating duck and squab. Popular local dishes include duck with bamboo shoots or white gourd.

In Poland, a sweet and sour soup called "Czernina" is made from duck blood and broth. This soup was a symbol of Polish culture until the 19th century. It even appears as a plot device in the epic poem "Pan Tadeusz."

Specific regional dishes highlight unique local ingredients and methods. In Bali, Indonesia, people prepare "bebek betutu." This involves seasoning the duck with pungent roots and herbs before wrapping it in banana leaves to roast.

In Singapore, "duck rice" combines braised or roasted duck with white rice. In the Sichuan region of China, "Zhangcha duck" is a tea-smoked dish. Chefs smoke the marinated bird over tea leaves and camphor plant twigs. They then steam the duck and finish it by deep-frying.

Modern food production involves large quantities of these birds. The USDA reports that about 39 million ducks are raised for meat each year in the United States. However, people must be aware of environmental factors when eating wild ducks. A 1981 report in "The New York Times" noted that wild ducks might contain pollution from rivers.

A 2025 study in "Science of the Total Environment" looked at 108 waterfowl specimens. Researchers found detectable levels of PCBs, OCPs, and PFAS in the samples. Because of these chemicals, some regions like Wisconsin have issued warnings about consuming certain wild ducks.
