These bite-sized foods are traditionally enjoyed for brunch in restaurants. The term "dim sum" literally translates to "touch the heart." This name captures the delicate nature of the small food items. Dim sum is most closely associated with Cantonese cuisine. However, various other Chinese cuisines also have their own versions. The experience is deeply tied to the practice of "yum cha," which means drinking tea.

In Cantonese culture, the tea and the food are inseparable partners.

The tradition of yum cha began to grow in the tenth century. During this time, the city of Canton, now known as Guangzhou, saw more commercial travel. Travelers frequented teahouses for small meals paired with tea. This custom was originally called "jat zung loeng gin," meaning "one cup, two pieces." This referred to serving two delicate items with a cup of tea. Over time, teahouse owners added more snacks to their menus. This evolution led to the modern, diverse dim sum culture we see today.

Dim sum is categorized by many different types and serving times. Some items are regular offerings, while others are seasonal or weekly specials. Restaurants may also serve banquet dishes, holiday dishes, or house signature dishes. The timing of the meal also defines the type of dim sum. You might find breakfast or lunch foods, or even late-night snacks. Some restaurants in Hong Kong and Guangdong province serve dim sum all day long. This flexibility allows the cuisine to fit many different parts of daily life.

There are many ways to prepare and serve these dishes. Many dim sum items are made of seafood, meats, or vegetables. These fillings are often wrapped in dough or thin skins. Chefs use several cooking methods, including steaming, deep-frying, and pan-frying.

In many traditional restaurants, servers use steam-heated carts to offer food. They move through the dining room, allowing customers to select dishes directly. Most people eat "family-style," which means sharing small plates among everyone at the table. Each dish usually contains only three or four pieces. This method allows diners to sample a wide variety of flavors.

The variety of dim sum is truly immense. Some estimates suggest there are at least two thousand types across China. Guangdong province alone is home to over one thousand different dim sum dishes.

No other area in China comes close to this level of variety. While many Chinese food cultures include local snacks in their cookbooks, Cantonese dim sum has become its own distinct branch of cuisine. Modern chefs even create fusion-based dishes or buns shaped like animals for social media appeal.

Specific dishes offer unique textures and tastes.

Dumplings are a major category, including the xiaolongbao, which contains a rich broth inside. You might also try shrimp dumplings, known as ha gao, or pan-fried guotie. Rolls are another popular group, such as tofu skin rolls or rice noodle rolls. Buns like the cha siu bao, filled with barbecue pork, are also common.

For those with a sweet tooth, dessert dim sum is available. This includes items like lotus seed buns or sweet cream buns. There are even savory cakes made from turnip, taro, or water chestnut.

Dim sum is also connected to the local environment and social customs. In the subtropical climate of southeast Guangdong, the heat can sometimes decrease appetite. Because of this, people often prefer smaller, scaled-down meals throughout the day. This lifestyle supports the tradition of having multiple tea times. Historically, teahouses in Guangzhou served "three teas and two meals." This included breakfast, lunch, and dinner, along with afternoon and evening teas. Today, dim sum remains a vital way for people to connect through shared food and tea.
