This type of chocolate has a much higher cocoa percentage than milk or white chocolate. Because of this, the flavor is often bitter and very strong. It can taste smoky, nutty, or even sour depending on the beans. Some people call it plain chocolate in Britain. In East Asia, it is often called black chocolate.

People value it for its deep flavor and its many health benefits.

Making dark chocolate involves several careful steps. First, makers mix the ingredients together. Then, they go through refining and conching to make it smooth. Conching is a way to improve the texture and flavor. After that, they use a step called standardizing. During this step, they add emulsifiers like lecithin to help the texture.

Some makers even add a little milk fat to keep the chocolate soft. They might also add vanilla to make the taste even better. This careful work ensures the chocolate is high quality.

Humans have enjoyed cacao for thousands of years. The cacao tree was domesticated over 5,000 years ago. The ancient Mayo-Chinchipe people in Ecuador used cacao around 3300 BC. Later, the Olmec people in Mexico and Central America also used it. Around 1520, Spanish explorers tasted different cacao drinks. In 1828, Coenraad Johannes van Houten created a way to make cocoa powder. This allowed for mass production of chocolate.

Dark chocolate has a very interesting history in different countries. In the United States, people once thought it was too masculine for children. During the World Wars, it was even added with vitamins like A, B, and C. This helped prevent malnutrition during those hard times. In France, makers worked hard to make dark chocolate very popular. They wanted people to appreciate its sophisticated taste. By the 1990s, these French flavor standards moved to the United States. Now, many people look for specific bean origins when they buy it.

Dark chocolate is quite different from the milk chocolate you might know. It is harder because it has different amounts of fat and particles. It also stays fresh longer, lasting about two years, because of antioxidants.

However, it can contain heavy metals like lead or cadmium from the soil. Because of this, some experts suggest watching how much is eaten. A 2024 study even found that eating more than five servings a week might lower the risk of type 2 diabetes. It is a complex food with a very long story.
