People first added cocoa to cakes in the 1600s. For a long time, chocolate was only for drinks. It was used as a filling or a glaze. In 1828, a man named Coenraad van Houten found a new way to make cocoa powder. This made chocolate cheaper for everyone. Later, Rodolphe Lindt made a way to make chocolate smooth. This is called conching. It helped the chocolate mix well with cake batter.
