Beta-carotene is a bright red-orange pigment found in many living things. It is a type of carotenoid, which is a group of natural colors. You can find it in plants, fruits, and even some fungi. It is the most common color in plants. This pigment is very important because it is a provitamin. This means your body can turn it into vitamin A.

Scientists have studied its structure since 1930. They can pull it out of fruits using a method called column chromatography. In big factories, they often get it from a type of algae called Dunaliella salina.

Your body has a very specific way of using this pigment. First, the beta-carotene must be separated from plant cells during digestion. It then moves into tiny bubbles called micelles to be absorbed. This happens in a part of your small intestine called the duodenum. A special protein called SCARB1 helps carry it into your cells.

Once inside, an enzyme called BCO1 breaks one molecule of beta-carotene into two molecules of vitamin A. This process helps your body get the nutrients it needs. Your body even has a feedback loop to stop absorbing it if you have enough vitamin A.

There are many foods that are rich in this orange pigment. Carrots are a famous example, with about 9.2 milligrams per 100 grams. You can also find it in sweet potatoes, which have 9.4 milligrams. Other good sources include pumpkin, spinach, and kale. Even green leaves like spinach contain it, but the green chlorophyll hides the orange color.

Some fruits like mangoes and papayas are also very high in it. People can also take beta-carotene as a dietary supplement in capsules. These capsules are often made with oil to help the body absorb them more easily.

Sometimes, eating a huge amount of these foods can cause a change in your appearance. If you eat too much for a month or two, you might get carotenodermia. This is a harmless condition that turns your skin a bright orange color. It usually shows up on your palms and the soles of your feet.

It does not change the white part of your eyes, which helps doctors tell it apart from other issues. This orange tint is reversible if you stop eating so many orange foods. It is not a dangerous condition, but it is a very noticeable one.

Scientists use different ways to measure how much vitamin A you are getting. One way is using International Units, or IU. A newer way is called Retinol Activity Equivalents, or RAE. The RAE method is better because it accounts for how different people absorb the pigment.

For example, 1 microgram of RAE is equal to 12 micrograms of beta-carotene from food. This is because your body has to work to turn the food into vitamin A. Researchers also study how beta-carotene might link to health, such as its role in the eyes. Some studies look at whether it helps prevent eye diseases in older people.
