This heat comes from a substance called capsaicin. It is a colorless, solid material.

You can find it in the white pith of the pepper. This is the part near the seeds. The seeds do not make capsaicin themselves.

Capsaicin works by tricking the body. It binds to a receptor called TRPV1. This is a part of the nerve fibers. These fibers sense heat and pain. When capsaicin touches them, they send signals to the brain. This makes you feel a burning sensation.

It feels like the area is very hot.

Plants use this to stay safe. Most mammals find the heat painful. They might stop eating the plant. This protects the seeds from being crushed. Birds do not feel the heat from capsaicin. They eat the seeds and spread them to new places. This helps the plant grow in new spots. Capsaicin also helps stop the growth of some fungi.
