Before cooking, the meat sits in a marinade. This is a liquid soak that adds flavor. It often has soy sauce, sugar, and garlic. Chefs might add pear or pineapple to make the meat soft. Some let it soak for one hour. Others let it rest in the fridge all night.

This food has a very long history. It may have started during the Goguryeo era. Back then, it was called "maekjeok." People grilled the meat on long sticks called skewers.

During the Joseon period, it was called "neobiani." This meant the meat was thinly spread. It was a special food for wealthy people and nobility. In old books, it was also called "yeomjeok." This name also means "fire meat." Today, we still call the skewered version "bulgogi sanjeok."

There are many ways to enjoy bulgogi today. Most people grill it on a barbecue. You can also cook it in a pan on a stove.

In many restaurants, a grill sits in the middle of your table. You can cook the meat yourself right there. Some people like a spicy version. They add a paste called "gochujang" to the mix. This paste is made from chili powder and fermented soybeans. You can also find bulgogi in fast-food burgers. These burgers use the same tasty marinade.

Eating bulgogi is often a shared experience. It is usually served with a bowl of rice. You might also have egg soup or kimchi. Kimchi is a type of fermented cabbage. Many people like to make wraps. You take a leafy green vegetable and put meat inside. You can add a bit of "ssamjang" or rice too. Then you eat the whole wrap together. It is a wonderful way to enjoy a meal with friends.
