It comes from the port city of Marseille. Long ago, local fishermen made this dish. They used bony rockfish that they could not sell.

Many kinds of seafood go into the pot. A traditional recipe uses three main fish. These are rascasse, sea robin, and conger eel. Some cooks also add monkfish or mussels. They simmer the fish with vegetables. These include leeks, onions, tomatoes, and potatoes. Special herbs and spices give it a unique taste. Saffron and garlic are very important.

There is a special way to eat it. First, you eat the hot broth. You eat the broth with bread and rouille. Rouille is a spicy sauce made from oil and garlic. Then, the fish and potatoes are served on a large platter. Some people like to eat the fish and broth together. Every family in Marseille has its own way to make it. Some even have a charter to protect the real recipe.
