In botany, a berry is a specific type of fleshy fruit.

It develops from a single flower containing one ovary. This ovary is the part of the flower that holds the seeds. As the fruit matures, the entire outer layer of the ovary wall ripens. This fleshy, ripened layer is known as the pericarp.

While we often call small, sweet fruits "berries" in the kitchen, botanical definitions are much stricter. For example, grapes, tomatoes, and even bananas are true botanical berries. However, strawberries and raspberries do not fit this scientific definition. Understanding the berry helps scientists classify how plants reproduce and spread their seeds.

The structure of a berry is defined by its pericarp.

This pericarp is divided into three distinct layers. The outermost layer is the exocarp, which often serves as the skin. The middle layer is the mesocarp, which is usually the fleshy or juicy part. The innermost layer is the endocarp. In a true berry, the endocarp is soft or fleshy. This is a key way to distinguish a berry from a drupe. A drupe, such as a peach, has a hard, stony endocarp that protects a single seed. Some researchers suggest a berry must have an endocarp thinner than 2 mm.

There are several specialized types of berries based on their development. Some berries are epigynous, meaning they develop from an inferior ovary.

In these cases, the fruit includes tissue from parts of the flower other than the ovary. This occurs in bananas, blueberries, and many members of the Cucurbitaceae family. Other berries are classified as hesperidiums.

Hesperidiums are a type of berry found in citrus fruits like oranges and lemons. They feature a thick rind and a juicy interior divided into segments by septa. Another specialized type is the pepo.

A pepo is a berry with a hard outer rind, commonly found in gourds like cucumbers and pumpkins.

Scientists have worked for centuries to refine these botanical names.

The Latin term "bacca" was once used broadly for any small, round fruit. In the 1500s, Andrea Caesalpinus began classifying plants by their flowers and fruits. He distinguished between fruits from superior and inferior ovaries. Later, in 1751, Carl Linnaeus wrote the first major textbook of systematic botany. He used eight different terms for fruits to provide more detail. He defined a berry as having an "unvalved solid pericarp" containing naked seeds. In the late 1700s, Joseph Gaertner expanded these definitions even further. He introduced the term "pepo" to describe the unique structure of gourd fruits.

The diversity of berries is massive, spanning many different plant families.

Some berries are famous for being edible and sweet, like grapes or currants. Others are part of the Solanaceae family, which includes tomatoes and eggplants. Some berries are even used for flavoring, such as juniper berries.

However, not all berries are safe for humans to eat. The fruits of the deadly nightshade and certain honeysuckles are poisonous. Even some conifers produce berry-like structures. The yew tree produces a fleshy red aril that surrounds a poisonous seed. This shows that a berry-like appearance does not always mean a fruit is safe.

Many fruits that look like berries are actually quite different.

For instance, strawberries are actually accessory fruits. In a strawberry, the fleshy part grows from the receptacle rather than the ovary. Raspberries and blackberries are aggregate fruits. They consist of many small fruitlets from different ovaries joined together. Pomes, like apples and pears, are also not berries. They have a central core that separates the seeds from the outer flesh. Even the mulberry is different; it is a multiple fruit that grows from a cluster of many flowers.

From an evolutionary perspective, fleshy fruits like berries are a major success for plants.

Fossils indicate that early flowering plants primarily had dry fruits. Fleshy fruits only appeared later, near the end of the Cretaceous Period or the start of the Paleogene Period. This change likely happened because of animals and birds. These vertebrates eat the juicy, colorful fruit and then move the seeds to new locations. This process of seed dispersal helps plants spread across different environments. By evolving a tasty pericarp, plants turned animals into partners for their survival.
