People love it because it is sweet and refreshing. It is made by crushing and pressing ripe apples. This process is called maceration. The juice can be clear or a bit cloudy. Some people call cloudy, unfiltered juice "apple cider" in the United States.

Making juice follows a very careful set of steps. First, workers harvest the apples from the trees. They wash the fruit and move it to a factory. The apples are pressed to get the liquid out right away. This helps prevent the fruit from spoiling. Sometimes, makers use special tools to clean the juice. They use enzymes called pectinases to remove starch and pectin. Pectin is what holds tiny bits of fruit in the liquid.

Apple juice production has a long and busy history. Many different countries work hard to make it for everyone. China, Poland, the United States, and Germany lead the world in production. In the Northern Hemisphere, apples are picked between September and mid-November. In the Southern Hemisphere, the harvest happens between February and mid-April. A common type of apple used is the McIntosh. It takes about two medium McIntosh apples to make one cup of juice.

Safety is a very important part of making juice. Because juice is acidic, it can be treated with heat. This is called pasteurization. It kills tiny germs like E. coli or Salmonella. The FDA says heat can kill certain parasites in a few seconds.

Between 2000 and 2010, over 1700 people in North America got sick from unpasteurized juice. This can happen if fruit is grown in dirty soil. It can also happen if containers are not clean.

There is a lot to know about what is inside the juice. Apple juice is 88% water and 11% carbohydrates. Most of those carbohydrates are sugars. It has almost no protein or fat. One 100 ml serving has 46 calories. You must store fresh juice in the refrigerator. Sealed bottles can stay in a cool, dark pantry. Once you open a bottle, you must put it back in the fridge. This keeps tiny microorganisms from growing in your drink.
