They focused on using buffalo milk to create skimmed milk powder and condensed milk. This was a vital innovation because buffalo milk was plentiful in India, while cow milk was in short supply. Buffalo milk has a higher proportion of milk solids, which increased its economic value. This allowed the Amul brand to compete successfully against large international companies like Nestle and Glaxo.

His career involved significant national expansion through "Operation Flood." In 1965, Prime Minister Lal Bahadur Shastri tasked Kurien with replicating the Anand scheme across India. This led to the founding of the National Dairy Development Board (NDDB). Kurien led the NDDB and negotiated with international groups like the World Bank and UNICEF for aid. The project moved through distinct phases. The first phase, from 1970 to 1979, focused on 18 major milk sheds. The second phase, from 1979 to 1985, extended the plan to more than 290 towns.

During the final phase of Operation Flood, from 1985 to 1996, Kurien focused on independence.
