Parsley, scientifically known as Petroselinum crispum, is a versatile flowering plant.

It belongs to the Apiaceae family. This plant is native to the Balkans region. It has naturalized in many parts of Europe and the world. People grow it widely as both a flavorful herb and a vegetable. It is a vital ingredient in many global cuisines.

Parsley follows a specific life cycle called a biennial cycle. This means the plant takes two years to complete its life. In the first year, it grows a rosette of tripinnate leaves. These leaves can be between 10 and 25 cm long. The plant also grows a taproot to store food for the winter. In the second year, it produces a tall flowering stem. This stem holds flat-topped clusters called umbels.

These umbels are 3 to 10 cm in diameter. They hold many small flowers that are only 2 mm wide. The flowers are usually yellow or yellowish-green. After the seeds mature, the plant normally dies.

There are several distinct groups of parsley cultivars. The first is leaf parsley, which includes two main types. Curly-leaf parsley is often used as a decorative garnish. Flat-leaf parsley, also called Italian parsley, is often preferred by chefs. Many chefs believe flat-leaf parsley has a stronger flavor. It is also more tolerant of different amounts of rain and sun. A third type of leaf parsley has thick stems like celery.

Another major group is the root parsley, known as Hamburg root parsley. This type produces much thicker roots than leaf varieties.

While it is rare in the United States, it is common in Central and Eastern Europe. People there eat the root as a vegetable or a snack. It can also be used to make broth. Although it looks like a parsnip, the taste is quite different.

History shows that humans have used parsley for centuries. It is believed to have been grown in Sardinia. Evidence suggests it was cultivated around the 3rd century BC. The scientist Linnaeus identified Sardinia as its wild habitat. Parsley eventually reached England and was cultivated there by 1548. However, literary evidence suggests it was used in England during the Middle Ages. This includes the Anglo-Saxon period.

Parsley is used in many different ways in cooking. It is a key part of Middle Eastern, Mediterranean, and American dishes. In French cuisine, it is used in a mixture called persillade. This is a blend of chopped garlic and parsley. In Italy, it is the main ingredient in salsa verde. This condiment includes capers, anchovies, and garlic. In Brazil, parsley and scallions are mixed to make a seasoning called cheiro-verde.

This plant provides significant nutritional value. Fresh parsley is 88% water and contains 6% carbohydrates. It is a rich source of several important nutrients. It provides 20% or more of the Daily Value for vitamin K. It is also high in vitamin C, vitamin A, folate, and iron.

It contains compounds called apigenin and myricetin. However, pregnant women should avoid consuming excessive amounts. Large amounts may have uterotonic effects.

Parsley also plays a role in the local ecosystem. It attracts various types of wildlife to gardens. Some species of swallowtail butterflies use it as a host plant. Their caterpillars feed on the leaves for two weeks. After this, they turn into butterflies. Bees and other insects that feed on nectar also visit the flowers.
