There are three main types. These are the Atlantic, Pacific, and Greenland halibut. The Pacific and Atlantic types are the biggest in the world.

When halibut are born, they look normal. They have one eye on each side of their head. After about six months, one eye moves to the other side. This is part of a change called metamorphosis. This change helps them hide. Their top side is dark brown. Their bottom side is white. This is called countershading. The dark top blends with the ocean floor. The white bottom blends with the light from above.

Halibut live near the bottom of the sea. They eat almost anything they can fit in their mouths. They eat crabs, octopus, and even other halibut.

The name "halibut" comes from words meaning "holy flat fish." This is because they were very popular to eat on Catholic holy days. These fish are highly valued as both a tasty food and a fun sport fish. They live near the bottom of the sea in many different places.

A halibut's life starts with a very strange change. When they are born, they look like normal fish with one eye on each side of their head. About six months later, they undergo metamorphosis, which is a big change in how they grow. During this time, one eye actually moves to the other side of the head. Once the skull is fully formed, the eyes stay in their new spots forever. Their coloring also changes to help them hide using countershading. The top side turns dark brown to match the ocean floor. They live at many depths, from just a few meters to hundreds of meters deep. In the North Pacific, they are near the top of the food chain. People have fished for halibut for a very long time. The North Pacific fishery began in the late 19th century. In the past, fishermen had "derby" races to catch as many fish as possible in short times. Now, rules help keep the fish safe so they do not disappear. For example, halibut do not reproduce until they are eight years old. This means catching small fish is against the law in the US and Canada.

During this change, the fish develops a coloring pattern known as countershading. The side that faces upward becomes a mottled dark brown to blend with the ocean floor. The underside remains white to blend with the light from the sky.

Genetic and morphological studies help scientists understand how these species are related. A 2018 cladistic analysis revealed that the Greenland halibut diverged from a different lineage than the others. The Atlantic and Pacific halibuts share a more recent common ancestor. The Greenland halibut is actually most closely related to the Pacific halibut. Research suggests the Greenland halibut spread into the Arctic Basin around 3 million years ago when the Bering Strait opened. The species also show different sex-determining systems. The Atlantic halibut uses an XX/XY system, while the Pacific halibut uses a ZZ/ZW system.

As predators, halibut are near the top of the marine food chain in most ecosystems. Their diet is incredibly diverse, consisting of almost any animal they can fit into their mouths. Juvenile halibut primarily feed on small crustaceans and other bottom-dwelling organisms. As they grow, they consume sand lance, octopus, crab, salmon, cod, and even other halibut. They live at various depths, ranging from a few meters to hundreds of meters. In the North Pacific, they must watch for predators like sea lions, killer whales, and salmon sharks.

The history of halibut fishing is marked by both massive success and significant depletion. The Atlantic halibut has been heavily targeted since the 1840s. This led to the depletion of species in the Georges Bank by 1850 and the Canadian Arctic by 1866. The American fishing industry for this species collapsed in the 1940s. In contrast, the North Pacific commercial fishery began in the late 19th century and remains very lucrative. The Pacific and Greenland halibut populations have not experienced the same level of fragmentation as the Atlantic species.

Modern fishing is managed carefully to ensure the species remains sustainable. One important fact is that halibut do not reproduce until they are eight years old. Because of this, US and Canadian regulations prohibit catching fish below this length. In the North Pacific, the International Pacific Halibut Commission manages the fishery. In 1995, US regulators implemented Individual Fishing Quotas, or IFQs. This system grants holders a specific proportion of the total allowable catch each year. This change improved both the safety of fishermen and the stability of the fresh fish market.

Halibut are also a major target for sport fishermen who prize them as game fish. These anglers use large rods and reels with bait like herring or whole salmon heads. Because halibut are strong, they fight very strenuously when pulled from the water. In both commercial and sport settings, standard procedure involves subduing very large fish before they are landed. This is done to ensure safety and control. Whether caught for a meal or for sport, the halibut remains one of the ocean's most significant fish.
