They start as a hot liquid. As they cool, they set into a soft solid. This happens because of a protein called gelatine.

In the past, making jelly was very hard work. People had to get gelatine from animal parts. Because it took so much time, it was a special food.

Today, it is much easier. You can buy a powder in a box. You just mix it with hot water. You can add sugar or fruit juice to change the taste.

There are many ways to make jelly fun. You can use molds to make pretty shapes. You can also make layers of different colors. Some artists make 3D art in jelly. They use a syringe to put color inside a clear base.

Some people do not use animal gelatine. They use plants instead. In Asia, many use agar. Agar comes from red algae, which is a type of seaweed. In the Philippines, people use carrageenan. This is also from seaweed. They call these treats gulaman.
