Salmonella was responsible for 20.9% of cases. Escherichia coli O157:H7 made up 1.4% of the reported cases. Other bacteria accounted for less than 0.56%. 
Natural toxins produced by fungi are called mycotoxins. This can lead to a condition called alimentary mycotoxicosis. Mycotoxins are produced by fungi that grow on crops under specific moisture and temperature conditions. Aflatoxins are a well-known type of mycotoxin. They come from Aspergillus parasiticus and Aspergillus flavus. These are often found in maize, peanuts, and tree nuts. Aflatoxin B1 is particularly dangerous because it targets the liver. If a problem is found, the products can be removed from sale. At home, people can use several methods to stay safe. Refrigeration and freezing can stop almost all bacteria from growing. However, you must avoid the "danger zone" of temperatures where bacteria grow most rapidly.
