Cooking is a complex blend of art, science, and craft. It involves using heat to make food more palatable, nutritious, and safe to eat. This process is a cultural universal found in all human societies. People cook in private homes and in professional restaurants. When cooks focus on the aesthetic beauty and taste of food, it is called the culinary arts.

At its core, cooking is a chemical process. Most ingredients come from living organisms like plants and animals. Plants provide vegetables, fruits, grains, nuts, and spices. Animals provide meat, eggs, and dairy. Fungi, such as mushrooms and yeast, are also used. Cooking manipulates the molecules within these ingredients. These molecules include proteins, carbohydrates, and fats. Water and minerals like salt are also essential components.

Carbohydrates react to heat in fascinating ways. Long-chain starches from rice or potatoes break down into simpler sugars. This makes them easier to digest. If you heat sugar until the water evaporates, caramelization occurs. This is a thermal decomposition that creates caramel. Another process is the Maillard reaction. This happens when heat affects both sugars and proteins to enhance flavor. Cooks also use starches to thicken sauces. In Europe, a roux of butter and flour is common. In Asia, cooks often use a mixture of starch and water.

Fats and proteins also change during the cooking process. Fats include vegetable oils, animal lard, or butter. They can reach temperatures much higher than boiling water. This makes them perfect for frying, sautéing, or deep frying. Fats also carry flavors and vitamins that do not dissolve in water. Proteins, found in meat and eggs, undergo denaturation when heated. This means the protein molecules unfold and change texture. This can make meat softer or make egg whites turn into a rigid matrix. This rigid structure is vital for making meringues and cakes.

Water is another critical tool for the cook. You can use it to immerse food through boiling or simmering. Some methods, like steaming, use water vapor to carry heat. Steaming is often considered a healthy method because it preserves nutrients. Other methods include braising, poaching, and blanching. Heating liquid in an open container causes evaporation. This process concentrates the flavors in stews and sauces.

Humans have been using fire to cook for a very long time. Some scientists estimate that cooking began up to 2 million years ago. Evidence of controlled fire in South Africa dates back 1 million years. The oldest evidence of cooking fish teeth is about 780,000 years old. Widespread cooking fires likely appeared about 250,000 years ago when hearths became common.

History has also been shaped by the movement of ingredients. The Columbian Exchange moved foods between the Old and New Worlds. Potatoes, tomatoes, and chocolate moved from the New World to the Old World. In return, cattle, wheat, and rice moved to the New World. In the 19th century, cuisine became a symbol of national identity. Later, the Industrial Revolution introduced mass-produced and canned foods. Today, many people seek authentic, traditional cooking to feel connected to their heritage.
