It is a type of siu mei, or roasted meat. Cooks use a large gas oven to roast it. They often use pork shoulder for this meal. They season the meat with five-spice powder and rose wine. They also use maltose, which is a sweet syrup. This syrup gives the meat a shiny glaze. The spices turn the outside a dark red color.

People eat char siu in many ways. You can eat it with rice or noodles. It is a popular filling for dim sum. This includes soft buns or rice rolls. In Japan, people make a version called chāshū. They do not roast this meat. Instead, they cook pork belly in a liquid. They use soy sauce and sugar to add flavor. This meat is a common topping for ramen.
