Boiled egg

language culture Maturity 5-7 Next article →

Boiled eggs are a favorite breakfast food all over the world. Most people make them by putting chicken eggs into boiling water while the shells are still on. You can choose how you like your egg to feel by changing the cooking time. Hard-boiled eggs are cooked for about ten minutes until the white and the yolk are both solid.

Soft-boiled eggs are cooked for less time, which leaves the yolk runny and sweet. Some people even use special tools like egg cups or egg scissors to eat them.

Cooking an egg is actually a very interesting science. Inside the egg, there are proteins called albumin in the white and proteins in the yolk. When heat touches them, these proteins denature and solidify. This is called coagulation. The egg white starts to turn solid at a lower temperature than the yolk. Because the white surrounds the yolk, the heat takes longer to reach the center. This makes it very hard to make an egg with a solid white and a runny yolk at the same time.

People have been eating eggs for a very long time. They have been part of human history for as long as people have kept domestic chickens. We can find recipes for boiled eggs in the first known cookbook called De re coquinaria. In that old book, one recipe even uses preserved boiled eggs. A famous writer named Alexander Pope once suggested cooking eggs over the hot ashes of a fire.

In the Kanagawa Prefecture of Japan, people boil eggs in hot spring water to make Kuro-tamago. These special eggs have shells that turn black from the minerals. In the United Kingdom and Australia, people eat soft eggs with toast strips called "soldiers." In Southeast Asia, half-boiled eggs are often served in a bowl with soy sauce and pepper.

Sometimes, making the perfect egg requires a few extra steps. If you cook a hard-boiled egg for too long, a green coating can appear on the yolk. You can stop the cooking by rinsing the egg in cold water right after it is done. Some people also use a machine to make "long eggs" which are shaped like a cylinder. In China, duck eggs can be preserved in salt or brine for 20 to 50 days before being boiled. Whether they are part of a fancy aspic or a simple snack, boiled eggs are a wonderful part of many meals.
