Every beak is built upon a similar underlying anatomical pattern. All beaks consist of two primary bony jaws. The upper jaw is known as the maxilla. The lower jaw is called the mandible.

To provide strength, the mandibles contain a complex internal network. This network is made of three-dimensional bony spicules, also called trabeculae. These are seated in soft connective tissue inside the hard outer layers. This structure creates a lightweight but sturdy framework for the bird. The avian jaw functions through specific mechanical units. These include a four-bar linkage and a five-bar linkage mechanism.

The upper mandible has unique ways of moving. It is supported by a three-pronged bone called the intermaxillary. One prong embeds into the forehead, while two attach to the skull sides. A thin sheet of nasal bones connects to the skull at the nasofrontal hinge. This hinge allows the upper mandible to move upward and downward. The lower mandible is supported by the inferior maxillary bone. This is a compound bone made of two ossified pieces called rami. These rami join at the tip but are separate near the head. They attach to the skull at the quadrate bone.

The exterior of the beak is covered by a specialized sheath. This keratinized layer of epidermis is called the rhamphotheca. It is divided into the rhinotheca on the upper mandible and the gnathotheca on the lower. The covering grows from the Malpighian layer of the epidermis. A vascular layer exists between the rhamphotheca and the deeper dermis. This layer attaches to the periosteum of the beak bones.

In most birds, the rhamphotheca grows continuously. Some species, like puffins, shed parts of it annually. Others, like pelicans, shed a specific part called a bill horn. Some birds, including emus and albatrosses, have compound rhamphothecae. These consist of several pieces separated by soft keratinous grooves.
