It helps food grow big and stay light. It does this by making carbon dioxide gas. When the powder touches wet batter, a reaction happens. This reaction lets out gas bubbles. These bubbles expand and lift the dough.

Most baking powders use a base called sodium bicarbonate. This is also known as baking soda. They also use an acid, like monocalcium phosphate. To keep them from reacting too soon, makers add cornstarch. The starch keeps the mix dry.

Many powders today are "double-acting." This means they work in two steps. The first step happens when the mix gets wet. The second step happens when the heat of the oven hits the dough. This makes baking more reliable.

Long ago, people used yeast to make bread rise. Yeast can take a long time to work. It can also change the flavor. Baking powder was a big change. It made baking much faster and easier. It helped people make new treats like cookies and biscuits.
