Many people use a wok to cook. They can fry or boil food. They can even steam food in it.
Some woks are made of steel. Others are made of iron.
Some woks have a long handle. This is called a stick handle. It helps keep hands away from heat.
Cooking in a wok is fun. It can make food taste smoky and good. It is a special tool for many meals.
A wok is a deep, round pan from China.

Most woks have a round bottom. This shape lets a spatula scoop food easily. Some woks have flat bottoms for electric stoves. Most woks are made of carbon steel or cast iron. Carbon steel woks are light and heat up fast. Cast iron woks are heavy and stay hot for a long time.
Handles come in two main styles. Loop handles are on both sides. Stick handles are long and stay on one side.

Most classic woks have a rounded bottom. This shape helps a round spatula or ladle pick up all the food.

A wok is a deep, round-bottomed cooking pan of Chinese origin.

To use a wok effectively, a cook must master specific movements and tools. Traditional cooking often requires a long-handled spatula or a ladle. These long handles protect the cook from the high heat of the pan. The shape of the wok dictates how the food moves. A round-bottomed wok allows a round spatula to pick up all the food easily. This makes tossing the food around very simple. In contrast, a flat-bottomed wok is easier to use on electric stoves. However, it is harder to toss food effectively in a flat pan.
Woks come in many different sizes and styles. Small woks are perfect for quick cooking at high heat. Common home woks are sized for families of three or four people. These are often used for fast techniques like stir frying. Larger woks can exceed one meter in diameter. These massive vessels are used in restaurants or community kitchens. They are ideal for cooking large amounts of rice or soup. Some woks are even used for boiling large quantities of water.
The history of the wok is a subject of much scholarly study. It is believed to have derived from the South Asian karahi. It may also be related to the Southeast Asian kuali. These vessels likely entered China from India via Central Asia. The earliest depictions of woks in China date to the Han dynasty.
Modern woks are primarily made from carbon steel or cast iron. Carbon steel is the most widely used material today. It is relatively inexpensive and lightweight. Because it has a low specific heat capacity, it conducts heat very quickly. This makes it excellent for high-heat stir frying. However, carbon steel can be difficult to season. Seasoning is the process of carbonizing the surface to prevent sticking. High-quality carbon steel woks are often hand-hammered from multiple sheets of metal.
Cast iron is another common material, but it behaves differently. Chinese-made cast iron woks are often very thin and light. Western-style cast iron woks are typically much thicker and very heavy. Cast iron is superior for heat retention and uniform heat distribution. It also forms a very stable seasoned layer. However, cast iron responds slowly to heat adjustments. A cook must remove food promptly to prevent overcooking. Some modern woks also use non-stick coatings like Teflon. While convenient, these coatings cannot produce the traditional taste of wok hei.
Wok handles are designed for specific regional styles of cooking. Loop handles are common in southern China. These are usually mounted in pairs on opposite sides of the wok. Cooks often use a thick towel to hold these metal loops. Stick handles are more popular in northern China. These long handles are often called "pao woks" or "Peking pans."
