The production of vanilla relies on a very specific biological process. The orchid flowers are hermaphroditic, meaning they carry both male and female organs. The male part is the anther, and the female part is the stigma. However, a membrane separates these organs to prevent self-pollination.

Because the plant is not autogamous, it requires pollination to produce fruit. The flowers only last for about one day. This means growers must inspect plantations every day to find open flowers. To pollinate them, workers use a method of hand-pollination. A worker uses a beveled sliver of bamboo to lift the membrane. Then, they use their thumb to transfer the pollinia, or pollen masses, from the anther to the stigma. One flower produces exactly one fruit, which is a seed capsule.

There are three major species of vanilla grown globally today. All of them are derived from species originally found in Mesoamerica. The first is *V. planifolia*, also called Bourbon vanilla or Madagascar vanilla. It is grown in Madagascar, Indonesia, and tropical areas near the Indian Ocean. The second is *V. × tahitensis*, which is grown in the South Pacific. The third is *V. pompona*, found in the West Indies, Central America, and South America.

While these species exist, *V. planifolia* provides the majority of the world's supply. It has a much higher vanillin content than the other species.

The history of vanilla begins in Mesoamerica. Before it was domesticated, *V. planifolia* grew wild around the Gulf of Mexico. The Totonac people of Veracruz, Mexico, were among the first to domesticate it. They had been cultivating it since at least 1185. The Totonacs used vanilla as a fragrance in temples and as charms.

Later, the Aztecs used vanilla to flavor their foods and drinks. They often mixed it with cacao to make a drink called xocolatl. This mixture helped tame the bitter taste of the cacao. In the 1520s, Hernán Cortés is credited with introducing vanilla to Europe. By the 18th century, the French were using vanilla to flavor ice cream.

A major turning point in vanilla history occurred in 1841. Before this, growing vanilla outside of Mexico was difficult because the plants would not fruit. In 1837, the botanist Charles François Antoine Morren pioneered an artificial pollination method. However, his method was too expensive for commercial use. Then, a 12-year-old enslaved child named Edmond Albius discovered a simpler way.

Living on the island of Réunion, Albius developed the hand-pollination technique used today. This discovery allowed for global cultivation. By 1898, Madagascar, Réunion, and the Comoros Islands produced 200 metric tons of vanilla. This accounted for about 80% of the world's production that year.

Vanilla production is subject to many economic and environmental shifts. Madagascar and Indonesia are currently the largest producers. The market price of vanilla can change drastically due to weather. For example, tropical cyclones like Hudah in 2000 and Enawo in 2017 caused prices to spike. In 2004, prices reached US$500 per kilogram. However, prices can also drop due to decreased demand or imitation products.

Many products use an artificial flavor called vanillin. This vanillin is often derived from lignin instead of actual vanilla fruit. In fact, an estimated 95% of vanilla-flavored products use this artificial version.

Understanding vanilla also involves looking at its physical characteristics and uses. When the seed pods ripen, they turn brownish-red or black. As they dry, phenolic compounds crystallize on the surface. This gives the pods a diamond-dusted appearance called givre.

Inside the pod is an oily liquid filled with tiny black seeds. These seeds are often visible as small specks in cooked dishes. Because vanilla seeds struggle to germinate without specific fungi, growers usually reproduce the plant by taking cuttings. They remove sections of the vine with at least six leaf nodes and bury them in soil. This allows the vanilla industry to continue providing this unique flavor to the world.
