A 2017 study even suggested that sulfites can impact the bacteria in the human microbiome.
In rare medical cases, the body's inability to process sulfite is very serious. People with a condition called molybdenum cofactor deficiency cannot break down sulfite. This causes sulfite to build up in the blood. Without treatment, this accumulation can lead to neurological damage and death shortly after birth. However, a treatment called fosdenopterin became available in 2009. This medicine requires daily injections to help manage the condition. This highlights how vital the balance of chemicals is to human life.
