Spices are vital to the local economy. Nutmeg is a key crop for the island. The nutmeg comes from the Myristica fragrans tree. This evergreen tree grows up to 12 meters tall. It produces small yellow flowers and dark green leaves. The fruit looks like an apricot when it is ripe. Inside, a walnut-sized seed is wrapped in lacy, red-orange strips. These strips are used to make mace powder. The seed itself is ground into nutmeg powder.
Other important crops include cocoa, mace, cloves, vanilla, cinnamon, and ginger. Cinnamon comes from the inner bark of the Cinnamonum verum tree. Cloves are the dried, flavored flower buds of the Syzygium aromaticum tree. Sugar cane is also a significant crop. Farmers plant cane cuttings in holes about 13 centimetres deep. They grow other crops like bananas and corn between the cane. The juice is boiled and clarified using wood coal. This process produces liquid sugar and molasses. The molasses is then used to make rum in a still house.
