In the past, many families traveled to pick the cones by hand. This was a very hard job that required many workers. In 1909, Emil Clemens Horst patented a machine to separate hops. This made the harvest much more efficient. Now, hops are often dried in large kilns. They are then turned into small pellets. These pellets are easier to store than whole flowers.

Germany and the United States are the leaders in this industry. Together, they account for three-quarters of global hop production. For instance, the soil in the Maritime Provinces of Canada lacks boron, which hops require. Modern processing has also evolved to help with storage. After the late summer harvest, hops are dried in kilns using large fans. This heated air is forced through the beds of hops. The dried material is often processed into pellets. These pellets have much longer storage properties than whole, dried cones.
