Separation happens because different substances have different levels of volatility. Volatility describes how easily a liquid turns into a gas. 
The mechanism of a fractionating column relies on repeated cycles of condensation and vaporization. First, a liquid mixture is heated in a distilling flask. The resulting vapor rises up into the column. Inside the column, the vapor encounters cooler areas and condenses back into liquid. This liquid then meets rising hot vapor and vaporizes again. This cycle follows Raoult's law, where each step enriches the vapor in a specific component.
In laboratory settings, scientists use various types of glassware to achieve this separation. A common choice is the Vigreux column, which features glass spurs to increase surface area. 
Industrial distillation is much larger and is a major part of chemical engineering. Large-scale operations use vertical cylindrical columns known as distillation towers. 
Inside these massive towers, engineers use different internal structures to manage the separation. One common type is the bubble-cap tray.
Fractionating columns are vital to several global industries. The most famous application is in petroleum refineries. There, they separate complex crude oil into different fractions.
Industrial towers vary greatly in size to meet different needs. A typical industrial column might have a diameter between 65 centimeters and 6 meters. The height can range from 6 meters to over 60 meters.
