Writing about food has a very long and diverse history. Some of the earliest surviving culinary records include three Akkadian tablets from Ancient Mesopotamia dating to 1700 BC. In Europe, the earliest surviving collection of recipes is written in Latin and titled De re coquinaria. This work is often attributed to the Roman gourmet Marcus Gavius Apicius. The current text likely dates to the late 4th or early 5th century. In Asia, the Indian Manasollasa contains recipes for both vegetarian and non-vegetarian cuisines. It specifically describes cuisines based on the fermentation of cereals and flours.

Chinese and Korean traditions also have significant historical recipe collections. While many early Chinese books were lost, the Wushi Zhongkuilu from the late 13th century survives. Another important text is the Yinshan Zhengyao from 1330, written by Hu Sihui. This book recorded a Chinese-inflected Central Asian cuisine used by the Yuan court. In Korea, the Sanga yorok was written in 1459 by the physician Jeon Soon. The oldest Korean cookbook written by a woman is the Ŭmsik timibang from around 1670. These texts show how deeply food is recorded in different cultures.

European recipe books reappeared in the late thirteenth century after a long interval. About one hundred of these pre-printing era books have survived. The earliest genuinely medieval recipes are found in a Danish manuscript from around 1300. In Germany, the Kuchenmeysterey was the first printed cookbook, appearing in 1485. Famous French collections include Le Viandier, compiled by master chef Guillaume Tirel in the late 14th century. Another notable work is Le Menagier de Paris, written by an anonymous Parisian in the 1390s. English history also features The Forme of Cury, which was authored by the chefs of Richard II.

Modern cookbook writing changed significantly during the 19th century. In 1796, Amelia Simmons published American Cookery, the first known American cookbook. Later, Eliza Acton published Modern Cookery for Private Families in 1845. Acton is considered the first modern cookery writer for the home. Her book established the universal practice of listing ingredients and cooking times together. This format was later used by Isabella Beeton in her famous Victorian guide. Beeton's work included recipes alongside advice on science, religion, and household management.

Today, cookbooks serve a wide variety of people and purposes. Professional chefs use standardized recipes to maintain consistency in professional kitchens. Culinary students and institutional food service personnel also rely on these texts. Home cooks use them for everyday guidance or to explore new traditions. Some books become "kitchen bibles" that serve as records for entire national cuisines. These include works like The Joy of Cooking in the USA or Il cucchiaio d'argento in Italy. These books do more than teach cooking; they reflect social, political, and economic contexts.
