While some oils like gingergrass contain a mixture of both, others like peppermint oil only contain trace amounts.
Humans have interacted with these scents for thousands of years. Ancient Romans used caraway for medicinal purposes. However, scientists did not isolate carvone as a pure compound until 1849. A man named Franz Varrentrapp achieved this by mixing caraway oil with alcohol saturated with hydrogen sulfide and ammonia. This created a crystalline precipitate. He then used potassium hydroxide in alcohol and water to recover the carvone. Later, in 1885, Goldschmidt and Zürrer identified it as a ketone related to limonene. Finally, Georg Wagner proposed a plausible structure for the molecule in 1894.
Because natural sources cannot meet the global demand, most carvone is produced synthetically. It is often made from a chemical called limonene. Limonene is a byproduct of the orange juice industry, which makes it very inexpensive. To create R-(−)-carvone, chemists treat R-(+)-limonene with nitrosyl chloride. This creates a nitroso compound that is heated to produce carvoxime. Finally, treating carvoxime with oxalic acid yields the finished carvone.
Carvone is also a versatile tool in agriculture and insect control. In the Netherlands, S-(+)-carvone is marketed under the name Talent. It is used to prevent potatoes from sprouting too early while they are being stored. Additionally, the R-(−)-carvone isomer has been approved by the U.S. Environmental Protection Agency for use as a mosquito repellent. 
Chemists also use carvone in complex laboratory experiments. Because it is available in pure enantiomeric forms, it is an attractive starting material for the asymmetric total synthesis of natural products. For example, scientists used (S)-(+)-carvone to begin the synthesis of a terpenoid called quassin in 1998.
