She was born on June 28, 1819, in Visinada, Istria. This region is known today as part of Croatia. While her parents were not theatrical professionals, she was raised within an opera family. This environment likely influenced her early exposure to the performing arts. Grisi eventually became one of the most versatile dancers of her generation. She was noted for her ability to combine many different technical strengths.

To achieve her level of skill, Grisi underwent rigorous training. She studied at the ballet school of Teatro alla Scala in Milan. Later, she trained under the dancer and balletmaster Jules Perrot. This partnership became very important for her career. Grisi performed choreography by Perrot, which was highly acclaimed at the time. She toured throughout Europe with him. Grisi's career reached a turning point with the ballet Giselle. The world premiere occurred on June 28, 1841, at the Théâtre de l'Académie Royale de Musique in Paris. This was a two-act ballet featuring Grisi in the title role. Other performers included Lucien Petipa, who danced Albrecht, and Adèle Dumilâtre, who played Myrtha, the Queen of the Wilis. The production caused a sensation among the public. Reviewers called it the greatest ballet of its era. It was seen as a successful successor to the Romantic work La Sylphide. This single role established Grisi as a major star in Paris.

Her sudden fame led to significant financial success. In 1841, her salary was 5,000 francs. By 1842, it had risen to 12,000 francs. By 1844, her salary reached 20,000 francs. She also earned additional fees for her performances. Dance historian Lillian Moore noted that Grisi possessed a unique combination of skills. She had the buoyant elevation of Taglioni and the technical virtuosity of Elssler. She also had the mimic powers of Elssler and the exuberant facility of Cerrito. Because she could do so many things well, she was considered more versatile than her peers.
